Miso Stir Fry Bitter Gourd & Bell Pepper

100g  Bitter Gourd, sliced

70g Yellow Bell Pepper, cut into strips

30g Onion, minced

1tsp Miso

1Tbs coconut oil

1/4tsp mustard seeds

1/4tsp turmeric powder

1Tbs coconut fine

Heat the oil in a large deep skillet on medium-high heat. Add mustard seeds and onion, stir fry 2 minutes. Add remaining vegetables and stir fry 5 to 7 minutes or until vegetables are tender-crisp.

Add miso and turmeric powder ; stir-fry until well blended. Sprinkle with coconut fine.
