Chinese Miso Stir Fried Vegetables

2 eggplants

7 Manganji peppers

1Tbs Miso

1Tbs Mirin

1Tbs Sake

1tsp ginger

1Tbs sesame oil

 

Heat the sesame oil in a large skillet or wok over medium heat. Cook the ginger and vegetables in oil for 5-6 minutes, stirring constantly to prevent burning. Stir in Miso, Mirin and Sake.
