Lotus roots Miso Soup

100g Lotus roots, thinly sliced

120g Onion,thinly sliced

50g Mushrooms

100ml Soy milk

200ml water

1Tbs Miso

1Tbs Olive oil


Heat 1Tbs of oil in a pan or saucepan over a medium heat, add onion,mushrooms and lotus loots, fry for around 5 minutes, or until golden and softened.

Add water and cover the pan and simmer over a low heat for 10 minutes.

Place miso,soy milk and the half of the ingredients in a blender, mix until smooth.

Return it and the left of ingredients in a pan. Simmer over a low heat for 5 minutes, but not boiling.

Season with a pinch of black pepper.

玉ねぎ 120g

水 200ml

豆乳 100ml

味噌 大さじ1

オリーブオイル 大さじ1

胡椒 少々
