Spicy Miso Lotus Roots (Miso Kinpira)

Spicy Miso Lotus Roots

200g Lotus Roots, peeled and thinly sliced

50g Shimeji mushrooms

100ml water

1Tbs miso

1Tbs Mirin (sweet sake used in cooking)

1Tbs sake

2tbs sesame oil

pinch of Yuzu sichimi (Japanese hot spices)

In a frying pan, heat sesame oil over medium high heat and stir fry lotus roots.

Then add shimeji  mushrooms and water, and simmer until lotus roots are cooked.

Add the ingredients for the seasonings and cook until most of liquid evaporates.

When the liquid is almost gone,  sprinkle Yuzu spices.

味噌 大さじ1

みりん 大さじ1

酒 大さじ1
