Mushroom salad with Basil Miso Dressing

*Basil Miso Paste

30 g Basil leaves, coarsely chopped

3 Tbsp pine nuts, or mix pine nuts and walnuts, or use almonds, cashews or hazelnuts

4 – 5 Tbsp (about 80-100 ml) extra virgin olive

1Tbsp Miso

Process the basil leaves, nuts and Miso until smooth.  Gradually add the olive oil until well combined. Cover and refrigerate.

Place Mushrooms, tomato and any kind of vegetables of your choice in a large bowl. Toss to combine.
