Miso Marinated Eggplant

Miso Marinated Eggplant

2  small eggplants, cut into 3- by 1/4-inch sticks

1 tsp sesame oil

1 tsp grained ginger

1 Tbs Miso

2 Tbs vinegar

1 Tbs Mirin

Place eggplants in a small pan  with cut side down. Cover and cook over medium heat for about 6 minutes, until golden brown. In a bowl, place Miso,vinegar,Mirin and ginger and mix. Marinate eggplants for 2 hours, in the refrigerator.

みりん 大さじ1

酢 大さじ2

生姜 小さじ1

ごま油 適量
